As you mention Photek and Icarus (I assume you mean the early stuff, because if I remember correctly they stopped making dnb after Fijaka), maybe you could like the mid-to-late 90s output of Reinforced records. They surely knew their beatscience without being in yer face like earlier jungle tearouts or breakcore. There were some comps (for example this one http://boomkat.com/downloads/149724-var ... ght=149742) you could use as starting point to search for artists you like.
Or Source Direct? They went hand in hand with Photek.

jazzy dnb recs:
rpinell mentioned roni size represent's first album new forms, which i second. as he says, their later stuff is crap.

probably not what you'd consider jazzy, but for dnb fans, LTJ Bukem/Logical Progression (the first one) is a classic. Planet V is somewhat similar. In a similar vein, early Omni Trio also comes to mind (their first three albums). None of these has much "rhythmic variety". That's something you're basically not going to find in rank-and-file dnb. Ni ten ichi ryu by photek is about as good as you're gonna get. (much less jazzy, but the other classic dnb record I have to recommend is platinum breakz. Early renegade records comps are often good.) Ok, one more from this era: Goldie's Timeless may be up your alley. In Goldie's mind, he was reaching pretty far with that one - there are attempts at adding more jazzy elements or whatever.

I have to recommend squarepusher's hard normal daddy. It's not exactly dnb, but it's definitely jazzy/fusiony and there's plenty of 'rhythmic variety', and some of my favorite stuff Warp ever did. Check the track beep street for a highlight. Burningn'n Tree is another of his more jazzy-but-still techno efforts, much earlier and raw-er.

Somebody mentioned Amon Tobin, and I can tell you that his later stuff lacks the airy, organic quality of bricolage. It acquired a much more IDM-ish, FX-heavy, drier, machine aesthetic.

i've recently been digging on mixes from here: http://yearofmixtapes.blogspot.com/ . The guy made a mix every week for a year, and they tend to be themed by genre and time-period (e.g. UK Hardcore from '92 or Italo Disco). He covered a very wide range, and I've been enjoying what I've found so far. There are a few jungle mixes there, including one called 'ambient jungle', which may or may not meet your qualifications.

as i see you have a problem with a word "variety" i will use the word "complexity", and it's probably more fitting here. records like "black secret technology" (the first dnb i ever heard and still me favourite) or "new forms" offer a lot of variety and complexity and are really inventive. "modus operandi" is relatively sparse but it's very varied and unique. some stuff for me is more "jungle beat" looped for five minutes with some keys samples added here and there (see http://www.youtube.com/watch?v=rFVHjZYoq4Q). whi doesn't mean it's bad, but i don't really come back to it. i think "timeless" is great, but "jazzy" bits are not exactly my favourite part of it. it just means that there is some pretty cheesy sax in some places.

ok, since the Photek and the Guy Called Gerald were also my faves at the time, I feel more qualified to make a suggestion here. not checking the whole thread, but have you heard the double CD comp of stuff on the No U-Turn label, Torque?

I didn't like it as much as the two discs cited above, but it's certainly better than Goldie and probably Roni Size, a bit rougher and noisier than any of those as I recall.
